These monster cookies are one of my favorite peanut butter cookies, and this is the perfect easy recipe for when you just need a couple of cookies, or when that late night craving strikes. The perfect way to have cookies without being tempted by a couple dozen extra cookies.

These cookies are soft, and thick, and have the best chewy texture. They are a great cookie for both kids and adults, and are one of the best cookie options for peanut butter lovers.

This recipe makes just 6 large chewy monster cookies. It’s all made in one bowl, with no chill time, and is the perfect way to have satisfy your sweet tooth in no time.

What is a monster cookie?

A monster cookie is typically a peanut butter oatmeal cookie that is full of chocolate chips and m&m candies. The cookie dough can be made with a flourless peanut butter cookie base that is full of oats, or a classic peanut butter oatmeal cookie base (that does have flour).

The cookies are named monster cookies from the fact that they are often made quite large, and packed with so many delicious ingredients.

Ingredients Needed:

This is a quick overview of the ingredients you’ll need for this Small Batch Monster Cookies Recipe. The specific measurements and full recipe instructions are in the printable recipe card below.

  • unsalted butter
  • creamy peanut butter – you can use chunky peanut butter if you like the peanut pieces in the cookies, but use regular creamy peanut butter, not natural peanut butter.
  • brown sugar and granulated sugar – to add sweetness to the cookies
  • egg yolk – make sure its from a large egg
  • vanilla extract – to add a little flavor
  • all purpose flour
  • old-fashioned oats – use old fashioned oats, not quick oats – they’re also called rolled oats
  • baking soda – always check the date to make sure its fresh
  • salt – this balances out the sweetness of the cookies
  • chocolate chips – choose your favorite chocolate chips
  • m&m candies – the color of them just adds a punch of fun

How to make Monster Cookies?

  1. Add the butter, peanut butter, brown sugar, and sugar to a medium sized mixing bowl or the bowl of a stand mixer and cream them together for a couple of minutes until the color starts to lighten, a hand mixer works too.
  2. Add in the egg yolk and vanilla extract and mix until they are just combined.
  3. Add in the dry ingredients, your flour, oats, baking soda and salt and mix them into the wet ingredients until you have a nice soft cookie dough.
  4. Add in the chocolate chips and m&ms, though I like to save a few to put on top of the cookies after they’re done baking, and fold them into the dough.
  5. Measure out 1/4 cup of dough and roll it into a smooth ball. Place it onto a parchment paper lined cookie sheet then slightly flatten the falls to look more like a hockey puck. You can smooth out the edges sot they’re not crackly. Repeat with the remaining dough, placing the cookies a couple inches apart each on the baking sheet.
  6. Bake the cookies until the edges are a light golden brown and the tops are just barely set (about 10-12 minutes). Let the cookies cool for a few minutes on the cookie sheet, then transfer them to a wire rack to cool completely, or just a few more minutes to enjoy warm.

Tips and Tricks:

  • You can throw in extra ingredients into these cookies if you want, nuts, raisins, peanut butter chips, butterscotch chips, reese’s pieces, or whatever you have. But you only want about 1/2 of the mix ins total.
  • Press some extra chocolate chips and m&ms into the top of the cookies right after they come out of the oven to make them extra pretty.
  • If you want to make smaller cookies, you will need to cut the baking time down by a couple of minutes.

How to store leftover cookies?

Since the recipe only makes 6 cookies, you may not have any leftovers, but if you do – let the baked cookies cool to room temperature then transfer them carefully to an airtight container or a ziploc bag. They can be stored at room temperature for about 4 to 5 days.

You can also freeze them for up to 3 months, but again its just 6 cookies – if you want to freeze them to have extras for later I recommend making our full batch monster cookie recipe.
